TIME: 20 minutes + chilling time SERVINGS: 6 3 whole graham crackers, crushed 1 lg ripe banana, sliced 1⁄2 c sugar 1⁄4 c unsweetened cocoa powder 3 Tbsp cornstarch 1⁄8 tsp salt 3 c 1% milk 1⁄2 tsp vanilla extract 1 1⁄2 c semisweet or dark chocolate chips (MUFA)
- DIVIDE graham cracker crumbs evenly among 6 custard cups or ramekins. Press into bottom. Top with banana, reserving a few slices for garnish.
- MIX sugar, cocoa, cornstarch, and salt in large saucepan. Stir in milk. Whisk over medium heat until pudding thickens and comes to a boil.
- COOK 1 minute longer. Remove from heat and stir in vanilla extract. Pour into prepared custard cups. Cover with plastic wrap and chill for at least 2 hours. Top each serving with 1⁄4 cup of the chocolate chips and garnish with reserved banana.

 | 03:46 pm - New Wheel - Maybe? My boss loaned me her wheel, with the offer to sell it if I decide I want it. She doesn't know what kind it is, as it was a gift, (and she's under the impression its an antique) so she's not able to give me a whole lot of information. I'm pretty darn sure its not an antique. It looks a whole lot like an Ashford Traditional to me, but there are a few differences from what I can see of pictures online. Anyone else have any ideas of what "brand" it may be? Any help would be awsome!

 | 12:22 pm - handknit Friday! Hey, I'm actually wearing something today that I knit! Yes, even with record high temperatures, and the lack of AC in my house (current temp: 88 and rising, yayfun), I am wearing something I knit!
It's a sleeveless shell. In cotton. And it looks FANTASTIC on me, if I do say so myself:

We mailed 11,000 surveys for the California Board of Registered Nursing last week - I think they went out on Wednesday May 7. 10,000 of these are 16-page surveys for nurses with Active licenses, and 1000 are shorter surveys for nurses with inactive or expired licenses.
On Monday this week we started to get some "return to sender/undeliverable" envelopes back. On Tuesday we got some more.
On Wednesday we got more "return to senders" and then we also got these completed surveys...The pile on the left is now almost fully logged with a count of 100 so far. I think the total count for those piles will be about 220.
And then on Thursday, we got this:
Holy crap! Yes, that's four completely full boxes of completed surveys. Since the Wednesday delivery filled one box, I think there must be at least another 800 returned surveys here, making a total of 1000 returns in the first 2 days we have been getting any back.
To say that we are feeling a bit swamped would be an understatement. But we also are very excited! Whenever you receive a survey, and are tempted to throw it in the trash, please remember that there are researchers like me who need your help. State government agencies want to understand trends in nursing employment, education, and job satisfaction so they can plan smart policies to address problems. The success in California of expanding nursing education programs and moving us toward an end to our nursing shortage was driven at least in part by data that clearly showed the scope of the problem and analyses that estimated exactly how many more RNs we need to graduate to solve the problem.
So do your nice, earnest, policy-wonk researchers a favor, and fill out your surveys!

 | 10:18 am - Late night Chili & Rice My friend and I made a batch of "Out of the Pantry Chili and Rice". We used lean ground beef, onions, garlic, zucchini, roasted tomatoes and four kinds of canned beans.

 | 12:09 pm - Chewy crunchy chocolate chocolate chip cookies! I've been waiting a long time to post this recipe. The first time I made it I photographed the results but then never got around to writing down the recipe. I made them again last night and this time I remember what I did. So, here we go:

This recipe is adapted from More From Magnolia: Recipes from the World Famous Bakery and Allysa Torey's Home Kitchen, but I tried to healthy it up a little bit by eliminating the shortening, using 1/2 whole wheat flour and subbing 1/2 of the refined sugar with raw sugar. Richard's trying to avoid sweets and stuff this but I always want to share my food with him, so I try my best to make him feel less guilty about eating it.

 | 08:16 am - Ziti with Sausage, Onions, and Fennel I adore this dish because it turned out beautifully the first time I tried this recipe. I used 1/2 teaspoon of crushed red pepper for the chile flakes and that provided just the right amount of spiciness heat without being too much for those of us who don't like spicy foods. I was nervous about using tomato paste since the first (and only time) I had tried tomato paste before, I thought it had tasted funny. But nope. That must've been user error the other time. This time...this time I got to enjoy a beautiful blend of flavors. It was also my first time cooking with fennel. So perhaps the newness of that anise flavoring added to my enjoyment.
My boyfriend Brian arrived home with another foodie friend in tow just as I was finishing preparing dinner. As we carried all the food to the living room to eat, the lights went out. Our third roommate whipped out a bunch of candles. I opened a bottle of Montepulciano that I had been waiting for someone to drink with me since neither Brian nor our roommate drinks alcohol. This was the first multi-course meal I'd ever planned for a small group. We had prosciutto-wrapped melon for an appetizer and Brian set up a cheese plate for dessert. I was very pleased to have good friends over for good food and I sat in the candlelight, very content.

And yes, it's SO delicious! If you have a biological cheese quota like I do, you'll love it! :-) It's made with havarti and mozzarella cheese, and the dough has a nice consistency.

Yeah, I know. I haven't been writing much. I also haven't really been reading LJ a lot in the past month or two. So, I've likely missed some things. Life's been hectic. A bit crazy. Health continues to go in strange directions. But, I'm continuing.
I'm really looking forward to dancing tomorrow! It'll be a fun night! Current Mood: melting

I am a sneeze away from being done with my Organic Chocolate Tomato tee. I've been quietly knitting away on it. It's hard for me to tell if it's going well, since it will shrink 10% when I wash and dry it the first time. It doesn't look great now, but hopefully that will change. I also have mixed feelings about the colorwork, but I think I will like that much better after washing as well. Washing fixes everything!
The thing washing won't fix is that the ribbing on the one sleeve I finished is too loose. I'm going to reknit it with smaller needles. Cookie helpfully pointed that out to me, but was kind enough to also warn me not to show her my sweaters, because she'll always find something wrong. Duly noted, Cookie! I have also pulled my Lotus Blossom Tank out of hibernation. It was actually pretty much finished. I had sewn the shoulder seams and just had to finish around the edges and it was done. But, it wasn't right. I did two sets of short rows for the bust and that was too much. In addition, I hadn't knit far enough on the sides so it did some ugly angling things. I ripped back to right before I started the second set of short rows and I'm moving forward. It might even be done in the right season!
